A friend passing through town recently left our loft with a bevy of sweets, which was a kind gesture but yielded not much we actually wanted to ingest. So I left the fruit cake outside a neighbor’s door and doled out candy canes to drunken NYE sleepover guests. But two packets of instant hot cocoa remained. I turned to Google for ideas and came up with Peanutzo Chocolate Truffles. Le yum.
YOU NEED:
° 2 packets instant hot cocoa mix
° 3/4 c. peanut butter (I used chunky natural stuff)
° 1/4 c. soften margarine
° 1 t vanilla extract
° 1 c. sugar
° 1/4 t salt
° 4 or 5 biscotti cookies, crushed
Basically you dump all ingredients in a bowl and stir until well mixed. Use a spoon to scoop semi-uniform balls of the stuff and roll it around in the cookie crumbs. Then, on a sheet of either wax paper or lightly Pam’d aluminium foil (guess which I did), drop each truffle. Refrigerate for an hour or so until firm.
BONUS: Fantastic in fighting the period blues. I mean, THE MORE YOU KNOW!
